Hola amigos!
In Santiago, there is bread, out pan in Spanish, everywhere! It is served for breakfast, lunch, and dinner. Also, they have another meal in Chile called "once", which is a small meal in between lunch and dinner, and here there is also more... bread. There bread is absolutely delicious and I love carbs like any girl does, but it is so much more than I expected. My host mother is an amazing cook and I know I am getting authentic Chilean food which is awesome, but my body hasn't gotten used to it yet! If bread if my biggest problem for this experience though, then I can't complain!! I'll just have to do those extra crunches before I go to bed! There are many different kinds of foods that I have tried already with bread. First, and most importantly, I have had my first authentic empanada. And let me tell you...they are amazing. An empanada is a stuffed pastry dish and there can be many different kinds of fillings. The kind I had was a beef empanada with onions, eggs, and olives. The pastry is light and crispy, and the filing is seasoned perfectly. I plan on having many more of all different kinds before I leave. Second, my host family has had sandwiches and bread with eggs for once. The bread and eggs is very good and common here. I eat it almost like how I would eat today and eggs for breakfast. I put the eggs on my bad that has been toasted and eat it like that. My host mama cooks the eggs perfectly, and it reminds me of home. Lastly, when we go out to eat for lunch every day, we are served bread and salsa before our meals come out. The salsa is sometimes spicy, and I could eat the entire bowl if I wanted to. It's so good! All of the food in Santiago has been excellent so far, I just have to watch out for the bread or I will come back 50 pounds heavier! I will start taking pictures of my food to show how amazing the food is! Until next time, hasta luego! Oh! And I experienced the Chilean night life last night! Ecela had a fiesta with all of the foreign exchange students, and I had an absolute amazing time! Definitely worth while! Chio! Xoxo

Hola amigos!
First day in Chile was a success! So many things happened from the time I left my little haven of Buffalo! Let me tell you about my insane last 24 hours. Planes. I have no problem with flying. I have flown multiple times with my family and by myself, but international flying is like nothing I have ever done. The flight from Atlanta to Santiago was nine hours, and I found that I could not fall asleep. We were given pillows, blankets, and also dinner and breakfast! It was really fun to have so many accommodations. It was long, but I made it!! Host family...is amazing!! Mama Maria is great and she speaks a little English so that's super helpful for communication! Her son Ricardo is so funny, and his girlfriend is so sweet. My room is very nice, warm and comforting. The showers are super hot though! I wasn't expecting it and almost burned myself haha. Overall, everything has been great so far! I am so excited to start new adventures... let the times begin! There are only 13 short days left until I leave for one of the greatest experiences! I have many mixed emotions as I wait these last few days out. First, I am anxious to meet the host family I will be living with for three weeks. We still have not heard anything about them, so that is making me a little nervous. My family keeps asking me when I will know, and I can not give them an answer. I can tell they are worried, but I tell them not to and that I will be fine! Second, I am so excited to see our pen pals and our new friends again! I have kept in contact with my pen pal Cata, and I can not wait to see her! She has already planned so many things for me to do and see, I can not wait! I am scared to be in a big city that I do not know though, but I will be with friends that know their way around. Also, I always love to try and do new things, so this is the perfect opportunity for me! I can't wait to try my Spanish speaking skills out and I am excited to learn more. Overall, I am excited to make new friends, build the relationships of old ones, and learn a whole new culture. I can not contain my joy! Only 13 days!
